Low Fat Vegetable Lasagna

1 jar (25.75 oz.) Healthy Choice super chunky primavera pasta sauce
8 cooked lasagna noodles
2(6 oz.) pkg. fat free or reduced fat Mozzarella cheese slices
1 cup Nonfat cottage cheese
1 Tbsp. grated fat free Parmesan cheese
1 cup steamed vegetables, i.e. carrots, broccoli, and zucchini (do not over cook)

  • Spray 7X11 inch pan with nonstick vegetable spray. 
  • Pour a thin layer of sauce in bottom of pan. 
  • Place a layer of noodles on top of sauce. 
  • Top with 1/3 of the vegetables, ¼ of the sauce, 1/3 of the cottage cheese, and a layer of Mozzarella.
  •   Continue layering. 
  • Top with slices of Mozzarella; sprinkle with Parmesan. 
  • Bake at 350 degrees for 30 to 40 minutes. 
  • Remove from oven and let sit on counter 10 minutes before cutting.
